I never saw a purple cabbage nor did I think to see one But I can tell you anyhow I'd rather see than be one! (With apologies to Gelett Burgess.) At Bill's Farm Market these are displayed next to the gold cabbages. And each of them commands a pretty price. I didn't ask if chemistry is involved in this, I don't think it would cook up prettily, either. The recipe should use it raw or blanched in florets.
